In spring, the arboriculturalists hang our decanters up on the pear trees so that the fruit ripens inside them. During the harvest, an initial sorting is carried out to eliminate any decanters with a fault: fruit that has formed incorrectly, to small etc.

In September, we receive these decanters containing the fruit. After a brief rinse with water, we then add the Poire Williams pear eau-de-vie to the bottle. We then leave the carafes to rest for about 1 month to allow the eau-de-vie to penetrate the fruit.

We then bathe it several times in Poire Williams pear eau-de-vie to bring it up to the specified level.
To ensure the fruit is well preserved, it is essential that the pear is always kept immersed in the pear eau-de-vie.
